Loaded Smashed Red Skin Potatoes

Just like a potato skin but easier! Perfect side dish or appetizer for any grill out!

Ingredients

  • Red Skin Potatoes
  • Bacon
  • Mild Cheddar Cheese
  • Butter I use spray butter
  • olive oil

Instructions

  1. Cook or boil potatoes until soft (I use a Microwave Potato Bag because it is quick and easy! You can find these on Amazon.)

  2. Cook bacon crisp and crush in to pieces

  3. Coat baking sheet with Olive Oil

  4. Place potato on baking sheet and smash with potato masher

  5. Spray butter on the tops of the smashed potato

  6. Add desired amount of cheddar cheese to the top of each smashed potato

  7. Add desired amount of bacon to the top of each smashed potato

  8. Bake on 350° for 10 minutes (since every oven cooks differently I check on them after 5 minutes)
