I LOVE pickled beets! They are one of my favorite vegetables. In facts beets are in general. Did you know that beets help prevent cancer?
Here is a recipe for how to make pickled beets.
Drain a can of sliced or small whole beets (or you can clean and cook your own). Slice a medium onion thinly and add to beets. In a saucepan, bring to a boil a cup of cider vinegar, sugar to taste (start with about 1/3 cup) and a dash or two of salt. Pour this over beets. You can also add a dash or two of allspice or cloves. Cool and chill.
