This is a super easy easy recipe which is perfect for breakfast and a favorite when we visit my Mother-in-Law. It is one of my favorite breakfasts and I love when she serves it! You can easily substitute another type of meat.
Ingredients:
1 English Muffin
1 Slice of American Cheese
1 Egg – Fried Over Easy
1 Slice of Canadian Bacon
Directions:
Fry one egg over easy, heat Canadian Bacon in skillet.
Toast English Muffins.
Place egg on bottom half of English Muffin, top with Cheese and Canadian Bacon.
Serve Immediately.

For those that don’t like to fry your egg, I cook mine in the microwave in a small round pyrex lid sprayed with pam. I beat the egg with a scant tablespoon of water. Pour it into the Pam sprayed dish and cook it on 50% power for a minute and 30 seconds (may have to adjust cooking time depending on your individual microwave). This works great for a quick morning breakfast. Being cooked in the round lid, it fits the bun shape and makes a neater looking sandwich.
So easy and delicious!

An Egg McMuffin is my favorite breakfast item at McDonalds so I make them at home all the time. Like Dianne, I use a round ramekin that I spray with Pam (you won’t get the egg out if you don’t!) Crack the egg into the ramekin and break the yolk with a fork, then cover and microwave for about 45 seconds. Then put it on a lightly toasted English Muffin with American cheese and Canadian bacon. I also add grape jelly to my muffin…it’s sooo good that way!
