I decided to figure out a way to make Gluten Free Meatloaf as it is a family favorite. I made this and hubby said it was really good. Another great tip is to use a muffin pan to bake your meatloaf in. It really keeps the portions under control and it also cooks in less than a 1/3 of the time! Gluten Free Meatloaf ala Stockpiling Moms

Ingredients
- 1 lb. ground chuck
- ¼ cup chopped onion
- ½ cup crushed gluten free rice krispies or you can substitute with another cereal cracker or bread crumb (this is what I had in my pantry)
- ½ cup ketchup
- 1 egg
- optional: ½ cup diced green onions
Instructions
- Mix ingredients and place in a lightly greased loaf pan. Bake at 400 degrees for 45-55 minutes or until thoroughly done.
- I enjoy adding extra ketchup to the top of the meatloaf after it is done.
