    Crockpot Beef, Veggies and Rice Recipe

    Crockpot Beef, Veggies and Rice is an easy slow cooker recipe the whole family will love.

    My husband loves when I make this Crockpot Beef, Veggies and Rice meal for dinner.  It is perfect for him after a long hard day of work outside in the cold. My hubby does Heating and Air for a living and some days he comes home from a long day at work wanting a nice hot and hearty dinner. This recipe is one of his favorites because it is so filling.  I like it because it is a one pot recipe. I don't have to make a lot of sides to go with it.  It is perfect in the winter.    In fact nothing says comfort food to me like this recipe does.  You can enjoy it by the fire and warm up on a really cold day.

    I love how simple it is to prepare.  It is a dump and go slow cooker recipe.  Simply add beef, frozen vegetables, beef stew mix and water to crockpot and mix well. Put the cover on and cook on low for 6-8 hours. It is that simple!  You can also prepare as a freezer meal by dumping all the ingredients into a gallon size freezer bag and freezing.  When you are ready to cook simply pull out of the freezer and thaw in your refrigerator overnight. Place into the slow cooker and follow the recipe.

    With only 4 ingredients this is an easy slow cooker recipe.  I always serve over prepared rice or noodles.  You can also add a side salad and some garlic bread or corn muffins for a complete meal. You can often pick up stew meat on sale or for a fraction of the cost that roast is. It is a great way to stretch the family budget.     Ingredients

    • 2 lb cubed stew beef
    • 1 pkg frozen mixed vegetables
    • 1 pkg beef stew mix
    • 1 cup water
    • 3 cups rice prepared

    Instructions

    • Add beef, frozen vegetables, beef stew mix and water to crockpot.
    • Mix well.
    • Put cover on and cook on low for 6-8 hours.
    • Serve over prepared rice.

      Hi,I just found your website through pinterest and pinned a ton of your recipes including this one..I was wondering if there is a way you could make your own stew mix?Because its not something I would typically buy and I like making things like that.
