Oh how we love this tasty and easy Chicken Breast with Avocado Recipe. It is great for company because they will never realize how simple it is to make. It is also perfect for a family dinner. You will love the flavor combination in this low carb main dish recipe and so will your entire family. It is hands down one of my husbands favorite meals. He loves it with a baked sweet potato (if you are eating carbs). I prefer it with a nice large salad or roasted veggies. Whatever you decide to serve it with, I promise you will call it delicious!
Chicken Breast with Avocado is our favorite summer recipe! The avocado and pepper jack cheese make a great combination. In fact you can freeze avocado and use it for this recipe too! Sometimes we add a fresh tomato from our garden or the farms market when in season too! This is one of our favorite summer low carb recipes! It is simple to make and you can prepare in the skillet (stove top) or in the oven. The choice is yours! I have done it both ways. In the summer I usually opt for the grill. Best of all it is filled with healthy fats. I like to serve this with a huge green salad or cauliflower fried rice.

- 2 - 5 oz. chicken breast
- 2 - avocado slices
- 2 - slices pepper jack cheese
- 2 slices - tomato
- Saute chicken breast until golden brown and cooked through, approximately 5 minutes per side. Top with avocado, tomato and pepper jack cheese. Melt cheese under broiler or in a covered skillet. Serve immediately.
- Can also be made on the grill or baked in the oven. Cook through and then add toppings to melt cheese.
