I took our BBQ Crock pot chicken recipe and turned it into shredded BBQ chicken. This is a super easy recipe and a great way to stretch your dollar by shredding the chicken and serving it on a bun. I was able to turn 3 chicken breasts into enough to feed my family for 2 nights! This is a great recipe when you are feeding a large crowd. The chicken goes further and tastes great on a bun. In fact you can easily double this recipe and serve it as the whole breast the first night and use the leftovers to shred to mix up the leftovers a bit for your family and serve it the second night on a bun.

Ingredients
- 3-4 Boneless Chicken Breasts
- Bottle of BBQ sauce

If Diet Coke is heated above 86 degrees, the wood alcohol in the aspartame turns into formaldehyde and then formic acid 🙁 Maybe regular coke would be safer? Not sure.
Melissa @ Stockpiling Moms
I would not use Diet Coke either.

You can also make this with a jar of free chi chi's salsa for a mexican burrito night! Sometimes I add the shredded chicken into a taco bake!

A good BBQ sauce that I use for little smokies and have used with shredded beef/chicken is simple and can be used in a crockpot...about 1 1/2 C of Heinz Ketchup, 1/2 C of Smuckers Grape jelly and for a little kick, add a cpl or a few dashes of franks hot sauce ot tobasco. I dont measure, i just do the taste test while making the sauce. Enjoy!

I have a family of 8 6 of us being teenagers/adults. How many does this recipe feed?
jenn
I would estimate 1-2 chicken breasts per teen/adult and 1/2 for younger kids, so just adjust the number of chicken breasts to meet your needs.

This recipe turned out really good! I used a different (locally made) BBQ Sauce. The chicken shreds easily and is delicious!
