    Crockpot Chicken and Veggie Delight

    Crockpot Chicken and Veggie Delight is a light and flavorful dish that is perfect in the summer with fresh vegetables from the garden.

    Crockpot Chicken and Veggie Delight is perfect for the summer.  It so easy to make and doesn't heat up your kitchen because you are using your slow cooker.  Plus if you garden you will have fresh veggies to choose from. If not you can always shop at your local farmers market. You can substitute with any vegetable and if you want to make this vegetarian I would suggest tofu or potatoes instead of chicken. We like to serve over rice or quinoa.  You can also serve it over a bed of pasta.

    Simply place the chicken in crockpot. You might want to spray your slow cooker with cooking spray or use a crockpot liner. Add your assorted veggies of choice. Add tomato sauce.  Finally add Basil and Oregano (I like fresh). Add water if necessary to cover (however I prefer tomato juice instead). Cook on high heat for 1 hour and turn down to low for 3 hours.  I like to serve this over a bed of rice.  It is a complete meal with all the veggies and protein.  It is filling but light which is perfect for summer.

    If you you can prepare as a freezer meal.  Simply combine all ingredients and freeze.  Select vegetables that freeze well such as carrots, Brussels sprouts, butternut squash, green beans, peppers and onions.  When you are ready to cook thaw in the refrigerator overnight and add to slow cooker.  Cook on low for 8 hours.

    Ingredients

    • 1 32 oz Can of Die Fratelli Tomato Sauce or brand of choice
    • 4 chicken breasts
    • 2 teaspoon Italian Seasoning
    • Variety of Veggies cut up - Peppers, Zucchini, Onion, Mushroom (whatever your family likes and you have on hand)

    Instructions

    • Place chicken in crockpot
    • Add veggies
    • Add tomato sauce
    • Add Basil and Oregano (I like fresh)
    • Add water if necessary to cover.
    • Cook on high heat for 1 hour and turn down to low for 3 hours
    • Enjoy over a bed of rice

      Looks delicious, and I can't believe how easy this is to make. For vegetarians, do you think this dish would work with potatoes or tofu instead?

      I love this dish!
      Add a tsp of rosemary, thyme and marjoram and it is like chicken caccitore!
