    The spices used in this recipe really bring the dish to life and will make your taste buds explode with delight! My husband and I were pleasantly surprised by the amazing taste and how hearty this meal was. You will not be disappointed so be sure to try this Paleo and Gluten Free recipe!

    This is what the delicious meal will look like in your dinner bowl! This recipe is so yummy!

    I love to serve this delicious dinner with Roasted Broccoli and Homemade Garlic Bread.  You could easily cook with the skins on if you choose and add chunks of fresh apples too!  Be sure to use unsweetened applesauce to keep this recipe Paleo.

    Be sure that you invest in a good quality slow cooker.  Our favorite is this programmable cook and carry 6qt oval slow cooker.   We hope you enjoy this delicious Crockpot Chicken with Apple and Sweet Potato recipe as much as we do.  It is the perfect recipe for fall!

    Crockpot Chicken with Apple and Sweet Potato

    Crockpot Chicken with Apple and Sweet Potato is the perfect easy dinner for Autumn. This delicious clean eating meal has such a great savory taste with a little bit of sweetness.

    Ingredients

    • 2 whole sweet potatoes, peeled and cut into 1-inch chunks
    • 1 pound boneless skinless chicken breasts cut into 1-inch cubes
    • ¼ teaspoon Sea salt + cracked black pepper
    • 2 cloves garlic, finely minced
    • ½ cup chopped red onion
    • 1 cup unsweetened apple sauce
    • 2 teaspoons apple cider vinegar
    • 1 tablespoon curry powder, you can also use cumin if you don't have curry
    • ½ teaspoon ground ginger

    Instructions

    • Layer the sweet potato chunks and chicken breasts in the bottom of a slow cooker.
    • Season with salt and pepper.
    • In a small bowl, stir together the garlic, red onion, apple sauce, cider vinegar, curry powder, and ginger.
    • Pour the mixture over the chicken and sweet potato chunks.
    • Cover and cook on low for 6-8 hours, until the chicken and sweet potatoes are tender.
    • Serve alone or over rice.

        I was wondering the same thing. I have this in the crock pot right now, and I decided to cube the chicken so that it wouldn't end up as shredded chicken. Can't wait to try it.

      As far as the sweet potatoes go, you can leave the skin on for more nutrition. When roasting, etc. we've learned that the skin is really delicious. Also...am thinking of using apple chunks rather than applesauce.

      Love this recipe! So healthy and full of good nutrients! My favorite is to serve it over quinoa with a side of steamed or roasted brussel sprouts (or some other green veggie). I stick with all the same ingredients, with a few tweaks: I'm a little liberal with the onions, garlic, and spices, just to give it a little "kick," and instead of applesauce, I just use chopped fresh apple pieces. I also leave the skin on the sweet potato chunks and apples to keep all the extra nutrients found in the peels. They boil down so much in the cooker you honestly barely even notice them. I'm making it again today, and this time I've added some craisins to the mix - hopefully it's a good addition!

      I also love that there's no "prep" work for the meat on the stove - just toss it in raw! Great time saver. Definitely recommend trying this one!

      I tried this recipe after seeing it on pinterest and I'm not a fan. It was way to bland for me. I had high hopes for it since it smelled delicious. The curry really made this smell so good but the taste was blah. I hate to say this but we made it a pizza night.

        You can use any other vinegar (white) and if you want add 1 tsp of honey

          I found this in the 20 freezer meals in 4 hours list, but this (and some of the other recipes in that group) doesn't talk about actual freezer prep directions. Do you just combine everything into a bag, freeze, thaw the day before you want to use it & then cook as normal? I was also wondering about freezer meals in general. Is it okay to throw the raw chicken in with other foods?

            Yes, it is fine to throw in the raw chicken or other meat with the other ingredients. You can either cook and freeze and then re-heat or you can prep and before cooking freeze and then you thaw and cook or cook from frozen.

      Great recipe! Had this for dinner tonight and my boyfriend and I both loved it! He even said it was "elk camp" worthy. 🙂 I was very liberal with the spices, and I added a little garlic powder with the S&P on the chicken and sweet potatoes, I also added a little bit of honey. Thanks for the recipe!

      I wound up jazzing this up a bit and it turned out pretty good. I added about a cup of chicken broth and some honey mustard. I might do dijon mustard next time and some red pepper for spice. I like that this recipe is pretty healthy in and of itself :]

      I was not satisfied with the tasted so I added raisins, cashews,cinnamon, tumeric and maple syrup at the end. I t was very comforting.

      More prep time than indicated.

      I'll admit I didn't add curry because me and my boyfriend don't really prefer this seasoning. Outside of that I followed the directions/ingredients to a T and I also found that this dinner was very bland. :/ It wasn't as sweet as I expected or really anything at all. Do you think instead of using unsweetened applesauce regular applesauce would help?

        You can use sweetened applesauce or add honey for more sweetness. The curry is awesome in this dish but if you don't like it you could a spice you do enjoy.

      Sorry to have to say this but this recipe turned out awful. I followed the directions but it was bland and dry. My husband (who is not picky at all) barely would eat it. I took two bites and couldn't make myself eat any more. We ended up giving it to the chickens which I never do because I hate wasting food.

      I'm wondering if this recipe could be made without the chicken. Apples & sweet potatoes would make the perfect side dish for what I have in mind. Would I still need to cook the sweet potatoes for the same amount of time? And are there any spices you would leave out? Let me know, can't wait to try!

      Made this yesterday and it was very yummy! I left the skins on the potatoes & used SWEETENED applesauce. Those who are saying it was "bland" or dry: I'd recommend using sweetened applesauce (I did 2 cups of applesauce, instead of 1) and add more seasoning. I didn't find this to be bland or dry at all!

      I made this sometime ago and and was very pleased will try it with just cutting up apples-used thighs -I didn't fid it bland - may try it with the skins on sweet potatoes if I can find some good looking ones. Would have liked more sauce through
