    Crockpot Hamburger Soup

    Crockpot Hamburger Soup is one of my favorite freezer meals!

    Crockpot Hamburger Soup is a great soup to serve for dinner when it's cool weather outside! My hubby was a little hesitant about this soup but ended up having three bowls for dinner!!! I thought it was a perfect blend of veggies and meat. The best part was how easy it was to put this recipe together and let it do it's magic in the crockpot all day.

    You can serve this recipe with crusty French bread, corn muffins or oyster crackers with this delicious soup recipe. I love that it is a complete all in one meal.  It is really tasty and satisfying too.  I often worry that soups won't "fill up" my boys but this is one that does. The barley is the secret ingredient for that!  If you can't eat Barley I would suggest substituting with rice.

    Crockpot Hamburger Soup is one of my favorite freezer meals!

    Start by browning the meat and drain off fat. Add onion and sauté about 3 minutes. Combine all ingredients in the crockpot and cook on low 8-10 hours.  It is that simple!  Hard to believe but it is true.  This delicious recipe is an easy freezer recipe.  If you want to make this into a freezer meal simply follow the recipe and place into a gallon size zip loc bag and freeze.

    When you are ready to cook simply place in the refrigerator overnight to thaw. In the morning place the contents of the bag into your crockpot and cover. Cook on low for 8-10 hours and enjoy.  This is a great recipe to use for long days.  You can start your slow cooker in the morning and enjoy a delicious dinner when you come home from a long day.

    Ingredients

    • 1 ½ pounds lean ground beef
    • 1 medium onion chopped fine
    • 1 - 28 ounce can diced tomatoes
    • 1 small can of kernel corn
    • 2 cups water
    • 3 cans beef consomme soup undiluted
    • 4 carrots chopped fine
    • 1 bay leaf
    • 3 stalks celery chopped fine
    • ½ teaspoon thyme
    • ½ cup pearl barley
    • parsley salt & pepper to taste

    Instructions

    • Brown meat and drain off fat.
    • Add onion and sauté about 3 minutes.
    • Combine all ingredients in crockpot and cook on low 8-10 hours.
