All you need is some basic ingredients to whip together this snack. I love cucumbers and guacamole so one day I decided to try them together and that is how I came up with these amazing Cucumber Guacamole Bites.

If you are eating Low Carb or following the Keto Diet this is a low carb, high fat snack that is perfect for you. Simply prep your own Guacamole or if you are short on time use a store bought one. I love how this appetizer is easy to prep and can be taken on the go. It is perfect for summer party or lunch on the go. If you love cucumbers and guacamole this is for you! Be sure to give it a try. Cucumber Guacamole Bites
- 1 whole cucumber sliced
- 1 whole avocado peeled and pitted
- 1 whole garlic clove smashed and diced
- 2 drops lemon essential oil or 1 teaspoon lemon juice
- 1 tsp. onion powder
- ¼ tsp. salt to taste
- ¼ tsp. pepper to taste
- In a small bowl mash the avocado.
- Add garlic, onion powder and 2 drops of lemon essential oil and mix well.
- Add salt and pepper and taste test.
- If needed add 1-2 more drops of lemon essential oil and more salt and pepper.
- Scoop about 1 tablespoon onto each cucumber slice.
- Enjoy right away or refrigerate until ready to serve.
