    Keto Slow Cooker Pot Roast Recipe is so easy and the low carb leftovers are perfect to take to work the next day!

    This Keto Slow Cooker Pot Roast Recipe is my go to recipe when making a pot roast for my family.  It is a recipe that is embedded in my memory and I do not have to look anything up and most of the time I have all the ingredients on hand.  Some people always ask why I place butter on top of my meats when I cook them.  Well adding butter helps tenderize the meat and give it good flavor. It is just my personal preference so if you want to skip on the butter you certainly can.  It is a great way to add healthy fat too if you are eating a high fat low carb diet.

    I have been making this recipe a long time, even before I met my husband.  I love how easy it is to make and that it makes a complete crockpot dinner for my family.  I like to serve Cauliflower Mashed Potatoes with the Crockpot Pot Roast Recipe which makes me happy, because sometimes I throw potatoes in the pot roast for my family, but I do not eat them when I am eating Keto.

    Ingredients

    • 3-5 pound chuck roast
    • 1 cup baby carrots you may want to omit if Keto
    • 2 celery stalks cut in pieces
    • 1 small white onion quartered
    • 3 tablespoon Worcestershire sauce
    • ½ teaspoon minced garlic
    • ¼ teaspoon black pepper
    • 1 teaspoon dried parsley
    • 4 tablespoon butter cut in slices
    • You can also add rutabaga kohlrabi, parsnip, mushrooms, bok choy, radish, or other low carb veggie that you prefer.

    Instructions

    • Place vegetables (carrots, celery and onion) in bottom of the crockpot.
    • Place roast on top of vegetables.
    • In a small bowl combine Worcestershire sauce, garlic, pepper and parsley.
    • Pour the mixture over the roast.
    • Place butter slices on top.
    • Place lid on slow cooker and cook on low 8-9 hours.
    • Remove roast and veggies from slow cooker onto a platter.
    • Serve and enjoy!

    Easy Freeze Slow Cooker Directions:

    Simply dump all your ingredients into a freezer bag.  Freeze.  When ready to cook thaw in the refrigerator overnight. Dump ingredients into the slow cooker and cook on low for 8-9 hours.

      Are there any other vegetables that you would consider adding? I am not a big celery fan, and a Roast with only carrots and onions sounds a little boring.

              The best pot roast I have ever made thought it would be dry because of lack of fluids in recipe. Wrong again came out with plenty of juice don’t be afraid to try this one.

        One of my favorites is radishes in place of potatoes. The cooking time is very similar so I think they would work well in this crockpot roast recipie.

      This is simply one of the best pot roast I've ever had. I originally picked this because it was a simple recipe and I didn't expect it to be all that good. Boy was I surprised.
      I only made two small adjustments to the recipe above. The first was I added salt during the cooking process. And second I added a little bit more garlic and celery. The reason I added more is because I ended up cooking an 8lb roast.
      This is a great recipe thank you so much for sharing!

      Tried this two days ago and came out fantastic. Next time I am going to add two more onions and raw mushrooms. Moist but the onion completely dissolved to juice, and I think some bella mushrooms will add some flavor.

      You don’t add any liquid other than the Worcestershire sauce? You don’t add any water or anything to the slow cooker?

      Was skeptical given this recipes simplicity..... When it was done, roast was fall apart tender, juicy, and flavorful!! I actually prepared it the night before and pulled it out of the fridge the next morning and started it.... Used carrots, green beans, celery, onion, and one can of diced S&W tomatoes with green chili for flavor. Also sprinkled some kosher salt before cooking.... Will definitely use this one again and again.....

      I came across this and will need to try this. I actually have a roast to use but it’s smaller - 2.25 lbs.

      I figure it’ll need less time just not sure how much less. Any suggestions?

        What size is your slow cooker? A 4 qt would be perfect and then you can cook for a little less time. I would say 4-6 hours on low and test with a thermometer to be sure it is done.

      So easy to make. A little bland, but a sprinkle of salt on my bowl took care of that. Added sliced mushrooms on top before securing the lid. Next time i might consider adding a packet of lipton onion soup mix on top of the roast to give more flavor. Thanks for the great recipe!

      How many carbs are actually in this recipe? And what is considered a serving? I was going to add some small red potatoes and they are about 5 g of carbs and wanted to see what the total count would be.
