At the store in the frozen seafood section, you can find a small bag that is labeled salad shrimp. At my grocery store it is only $1.99 and I can make 4 salads from it. This salad is great for on the go for work, soccer games or picnics.
In my salad I used spinach leaves because they are my favorite, but you can use any lettuce you want for your base. I then topped with mozzarella cheese, mushrooms, bell pepper slices and fresh lemon juice. Next I added the shrimp on top and my salad was ready in less than five minutes!
