Have you experienced any problems with "8=hour low" dishes such as stews or casseroles being left for 10? We have some long days around here. (Looking at your mushroom barley stew,, cilantro lime chicken, etc.)

Going by this chart, would I be able to cook something that says low for 6 hours, on high for 2? Or would that not be enough time?
