I use frozen fruit for convenience, but depending on the season, you can use fresh fruit with the same results.  It's such an easy recipe, and so satisfying!  I hope you enjoy this one as much as we did!

    Ingredients

    • 3 cups peaches sliced
    • 1 cup blueberries
    • ¼ cup sugar
    • ¼ cup water
    • 1 teaspoon vanilla extract
    • 1 cup nonfat plain Greek yogurt
    • 1 cup self-rising flour

    Instructions

    • Preheat oven to 375 degrees.
    • Spray a 9"x13" baking dish with non-stick spray and set aside.
    • In a large bowl, mix together the flour, Greek yogurt, water and vanilla extract until it forms a dough.
    • Lightly flour a clean work surface and turn out dough onto surface.  Roll to ½" thickness, and cut in half. Use ½ of the dough to cut long strips to go on the bottom of the baking dish.  The other ½ of the dough can be cut into small pieces to place on top of the cobbler.
    • Use ½ the dough to place strips on the bottom of the baking dish.  It will not cover the dish, but will just be a few strips on the bottom.
    • Pour peaches and blueberries on top of dough in baking dish, and sprinkle with sugar.  You may mix together if preferred, but sprinkling on top works fine.
    • Top with remaining dough.  May sprinkle additional sugar on top if wanted.
    • Bake at 375 degrees for 35 minutes.
