    Avocado Egg Salad Recipe

    A twist on traditional egg salad. This avocado egg salad is amazing and packed with healthy fats!

    Avocado Egg Salad is great if you are trying to eat clean or just make healthier choices. This is hands down my favorite summer salad recipe.  I love to include low carb high fat foods into my diet.

    If you are looking for a way to include avocado into your diet this is the recipe for you!  You can even use a slightly overripe avocado and it is a great way to use a food item that may have gone to waste.  If you are like me your avocados can be unripe one day and they next day, they are mushy!

    This is an Easy Keto Diet Recipe that the entire family will enjoy.  I like to make a large batch of this recipe on Sunday and enjoy it throughout the first part of the week.  It is a great way to stretch the budget too because eggs are so much less expensive than other proteins.

    It is simple to prepare.  Just prepare your chopped hard cooked eggs with your avocado, mustard, mayonnaise and salt and pepper to taste. This is a delicious low carb recipe.  You can eat it as is or enjoy it on a bed of lettuce.  Also, I didn't have any issue with the avocado turning color but just be sure you seal it in an airtight container.

    The recipe turned out amazing, even my three-year-old loved it! Later in the week I made a sandwich wrap with the leftovers.  This is another great way to stretch your family budget by utilizing leftovers.  If you are eating low carb, just be sure to use a low carb tortilla or lettuce wrap.

    Avocado Egg Salad

    Ingredients

    • 6 hard-boiled eggs peeled
    • 2 avocados - peeled pitted, and cubed
    • 1 tablespoon prepared yellow mustard
    • ⅓ cup mayonnaise
    • salt and pepper to taste

    Instructions

    • Mash the eggs with a fork in a mixing bowl to break up.
    • Add the avocado, mustard, and mayonnaise.
    • Gently smash the ingredients together until blended.
    • Season to taste with salt and pepper.
