    Chicken Avocado Spinach Salad

    Chicken Avocado Spinach Salad is one of my favorite lunch or dinner choices.  You can add additional veggies of your choice.  It is filled with super foods!  I love that it is a healthy and clean choice.

    Chicken Avocado Spinach Salad is full of all the super foods that you need for a healthy low carb lunch!

    This salad is a gluten free and Paleo lunch option!  If you make your own dressing, you will be able to control additives and gluten. If you want a healthy store bough choice, I like Walden Farms (low in sugar and carbs) or Marzetti Simply Dressed would be another choice.

    Ingredients

    • Spinach Fresh
    • Hard Boiled Eggs sliced
    • Sliced Almonds
    • Bacon Crumbled optional
    • Craisins
    • Grilled Chicken chopped
    • Balsamic Vinaigrette Dressing
    • Avocado sliced
    • Cucumbers diced
    • Carrots Sliced
    • Broccoli optional
    • Cauliflower optional
    • Sunflower seeds optional

    Instructions

    • Add several handfuls of fresh spinach to a plate
    • Add grilled chicken, sliced almonds, hard cooked egg, bacon and avocado
    • Add balsamic vinaigrette dressing (you can make your own with balsamic vinegar and olive oil and a little lemon juice)
