    Crockpot 3 Ingredient Chicken & Sweet Potatoes recipe is full of flavor and is clean eating, gluten free and an easy dinner!

    Crockpot 3 Ingredient Chicken & Sweet Potatoes is such an easy freeze slow cooker meal and it's whole 30 compliant, gluten free and healthy too! But most important is that it tastes great with so few ingredients. You only need chicken, sweet potatoes and chicken broth plus spices. You do not have to add the spices but I wanted to give this dish some deep, full flavor so I suggest you add them. This is the perfect recipe for fall!

    A while back I had some chicken and sweet potatoes that I needed to use or they were going to go bad. So I cubed the chicken and added to a freezer bag. I then peeled and cubed the sweet potatoes and added them to the bag. I froze the bag in the freezer.  So one morning I was looking to see what I was going to make for dinner that night and came across it.  I decided to create this recipe using my leftovers.

    All I needed was chicken broth and spices to make a great healthy dish. I put the frozen chicken and sweet potatoes in the crockpot. (You can certainly use fresh chicken and sweet potatoes too!) Next I added a can of chicken broth. Then I added salt, pepper and minced onion on top. I let it slow cook all day and let me just say the end result was ah-mazing! Be sure to try this easy, delicious Crockpot 3 Ingredient Chicken and Sweet Potatoes freezer meal!  I am so happy for these leftovers because they helped me create a delicious dinner recipe the whole family loved.

    Ingredients

    • 2 chicken breasts cut into 1 inch pieces
    • 2 sweet potatoes peeled and cubed
    • 1 can chicken broth 14.5 oz
    • 1 teaspoon salt
    • 1 ½ teaspoon black pepper
    • 1 tablespoon minced onion

    Instructions

    • Put everything in the crcokjpot.
    • Place lid on top and cook on low for 8 hours.
    • Serve and enjoy!

        I actually use "it's better than bullion " chicken paste or cubes. It's less than $6 and the whole jar of paste lasts me a few months. It's 1 tbs to 8oz of water and is great for soups or just to moisten and flavor meals. I prefer it over the cans of chicken stock. I use the low sodium.

      Really dumb question but when you originally put your chicken and sweet potatoes in the freezer, was your chicken already cooked and just needed eaten or was it a fresh breast you just cut up and threw in with the potatoes? Want to prep that stuff tonight and make it something I throw in later in this week one morning. Thanks!

      Hi, I already froze two chicken breasts and would like to use them for this recipe. Can you use whole chicken breasts (frozen or thawed) for the recipe and cut them up later? And if so, how much longer would you need to let the chicken cook in the slowcooker?

      Quick question: Would this be good with butter beans thrown in?
      I'm trying to get my other half & my son to eat a bigger variety of... well... everything! Haha.
      & I've got a couple of tins of beans in my cupboard.
      I'm thinking add them towards the end?

      I am not a cook. That said, I made this without using pepper and onions. Since it needed something to give it a bit more flavor, I made a small bowl and tried adding maple syrup and pecans. Yummy. To make it a bit different I tried another bowl with cranberry sauce instead of the syrup. YES! If you do this, be sure to top it off with added pecans before enjoying.
      It's like a thanksgiving pot pie. If I had stuffing, I imagine that would make it even better, like leftovers altogether. 🙂

      Delicious!! I actually used fresh chicken & sweet potatoes, 4hrs low 2hrs high. I actually added half an onion and a whole green pepper. It just seemed to be missing something, so I added two cloves in the 5th hr, it came out perfect. I'm thinking about a bit of ginger and maybe some cornbread also next time. Great recipe!!
