No Bake Cookie Recipe - Ready in less than 10 minutes!

My husband LOVES No Bake Cookies! He has fond memories of enjoying these as a young school boy. He calls them “lunch lady” cookies. I love that they are so easy to make! This is a huge treat for him which cracks me up because they take less than 10 minutes to prepare. The hard part is waiting for them to cool.  I taught Home Economics for 11 years and this was always one of the kids favorite foods labs.

Ingredients
  • 2 cups Sugar
  • 1 teaspoon vanilla extract
  • ¼ cup cocoa
  • ½ cup milk
  • 1 Stick Butter
  • ½ cup peanut butter
  • 3 cups quick oatmeal
Instructions
  1. Add to a medium saucepan Sugar, Cocoa, Milk, Butter
  2. Heat to boiling on medium heat and boil for 3 minutes.
  3. Take off stove and vanilla extract, peanut butter, and oatmeal – Stir well.
  4. Drop by spoon onto wax paper or parchment paper and let cool

Use Gluten Free Oats for the these cookies to be gluten free

  3. YUM! I have never made these… I will have to pin to bake later… and good info to smart balance… we are can’t believe it’s not butter people… I will have to try that one!

  4. I love no bake cookies and I always use smart balance to help cut some calories. I also use almond milk instead of regular milk and it gives it even more of a nuttier flavor.

  5. These are some of our favorites too! They are so easy to make and can be dressed up with all types of extra goodies!
