    Healthy Traditional Meatloaf Recipe

We are including both Instant Pot and oven instructions in our printable below for your convenience. Making the traditional meatloaf recipe typically starts with a base of ground beef and ground pork. However, if you are watching calories this can be a bit heavier on the caloric intake. We made some adjustments and created a moist, flavorful, and easy meatloaf recipe that works to fit into our daily points while also giving that comfort food factor we want.

We use the Instant Pot DUO60 6-quart 7-in-1 Pressure Cooker for this recipe alongside a simple round bakeware piece. This CorningWare Bakeware set is our favorite since they fit easily into the Instant Pot and come with lids ideal for storing leftovers in the refrigerator.

    Prep Time: 10 minutes
    Cook Time: 1 hour
    Servings: 4 people
    Author: Melissa Jennings
    Cost: $6

    Ingredients

    • 1 lb 90/10 ground beef
    • 2 large eggs
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • 1 tablespoon Worcestershire sauce
    • 2 tablespoon sugar-free ketchup
    • 2 tablespoon sugar-free barbecue sauce

    Instructions

    • In a large bowl, mix together ground beef, eggs, salt, pepper, garlic powder, onion powder, and Worcestershire sauce until well combined.
Place mixture into the bottom of your oven safe dish that will also fit inside your Instant Pot. Press down into an even layer.
In a small bowl, mix together the ketchup and barbecue sauce then pour over the top of the meatloaf mixture.
In the Instant Pot, pour one cup of water, place your trivet in the bottom of the liner, and then add your dish containing the meatloaf.
Cover the meatloaf lightly with a layer of aluminum foil.
Place the lid on your Instant Pot and set to seal.
Using manual pressure, cook for 25 minutes. Allow to NPR (natural pressure release) for 5 minutes. Vent as needed, and remove the lid.
Using tongs or silicone gloves, remove the dish safely.
Use a spatula to remove the meatloaf from the pan, leaving excess grease behind. Discard safely.
Cut into 4 equal pieces and serve with your favorite sides.
      Oven cooking instructions:
      Preheat oven to 400 degrees
Place meatloaf in the baking dish and cover with aluminum foil
Bake for 45 minutes. Remove from oven and serve as recommended above.
