    Weight Watchers Ice Cream Sandwich

    I found the pizzelle cookies at my local Aldi grocery store. You can also buy them on Amazon or even find occasionally at stores like Ross or TJ Maxx. Just make sure to check the points on the brand you buy, as some are 2 points per cookie instead of the single point. This Weight Watchers Ice Cream Sandwich Recipe is one you will want over and over, so stock up on ingredients!

    Ingredients

    • 2 Pizzelle Cookies
    • ¼ cup Halo Top Ice Cream

    Instructions

    • Set Halo Top ice cream out on a counter to soften for 10 minutes
      Lay one pizzelle on a plate, and top with ¼ cup Halo Top ice cream. Top with additional pizzelle.
      Eat immediately, or wrap and freeze for later.
      Best if eaten within 1 week of making and refreezing.

    4-5 SmartPoints per ice cream sandwich on the WW FreeStyle Plan

    I love making up batches of these on the weekend so I have an easy to grab treat every evening. You can use vanilla cookies with strawberry ice cream like I did in the pictures above, or you can mix and match with the lemon cookies, chocolate cookies, or even the anise cookies. Halo Top ice cream is typically anywhere from 2-3 SmartPoints per ½ cup, so your points will vary slightly depending on the flavor you use for your version.
