We do a LOT of leftover soup. On Mondays I make a big crockpot of vegetable soup and have it for dinner usually with the GF Chebe Cheese bread. The Chebe bread mix is easy and by far the very best GF “bread” I’ve eaten. We usually have enough leftover for a couple of lunches. I pack the veggie soup with lots of different things and usually add soaked lentils and or navy beans for a little extra protein. I also add basil leaves or some type of greens and when my little ones get one in their soup they make a wish. We call them “wishing leaves”. Anything to get them to eat veggies!
