4 Ingredient Potato Soup
- 6-8 med/large potatoes peeled and cubed
- 4 cups chicken stock
- 1/2 cup chopped onion more if you love onions
- 2 tsp black pepper
- Place all ingredients in crockpot; stir and place lid on.
- Cook on low 6-8 hours.
- Remove lid and using hand masher, gently mash potatoes to make soup thicken up.
- Stir well and serve.
