All you need is potatoes, chicken stock, onions and black pepper. It makes a delicious, creamy soup that is perfect year round. When I have potato soup it brings such comfort and memories from when I was a child. It is the perfect soup for the winter months because it is so warm and filling.
This is a simple dump and go crockpot recipe. Simply place all the ingredients in the slow cooker and stir and place lid on. Cook on low for 6-8 hours. Remove the lid and using a hand masher, gently mash potatoes to make soup thicken up. Stir well and serve. I love that this is a dairy free soup. Most potato soups have cream to thicken. This is perfect for someone who is avoiding dairy or who eats dairy free. I am personally avoiding dairy so this recipe is perfect for me.

4 Ingredient Potato Soup
- 6-8 med/large potatoes peeled and cubed
- 4 cups chicken stock
- 1/2 cup chopped onion more if you love onions
- 2 tsp black pepper
Place all ingredients in crockpot; stir and place lid on.
Cook on low 6-8 hours.
Remove lid and using hand masher, gently mash potatoes to make soup thicken up.
Stir well and serve.
