This quick recipe for Easy 3 Ingredient Banana Bread is delicious! I could not believe how good it was with such simple ingredients. All you need is 3-4 ripe bananas, eggs, and a box of cake mix. Yes, you can make great tasting banana bread with a box of your favorite cake mix.
Banana Bread:
I had bananas that were getting over-ripe that I needed to use so I decided try this easy recipe. I quickly mixed all the ingredients together to create this delicious treat.
Simply mash the bananas in a large bowl, then add the remaining ingredients and mix well. Spray 2 small loaf pans or 1 large loaf pan with non-stick cooking spray and divide the batter and pour into two loaf pans. You can even make muffins.
Next I topped one of the loaves with mini chocolate chips. I love chocolate chips on everything, well almost everything so I decided to add them to one loaf. Next, I put them in the oven and baked at for 35-40 minutes at 350 degrees. You might need to bake a little longer if using 1 loaf pan.
Best of all you can easily make this gluten free when you use a gluten free cake mix or you can use a sugar free cake mix! Without the additional oil this is actually a lower fat version of traditional banana bread. Some readers think it has a bit of cake texture but my family thought it was great.
I like to keep yellow cake mix on hand and make this when I have surprise company visit. It is also nice to be able to make when I have over ripened bananas on hand. Another great tip is to use a spice cake mix. Our readers tell us that makes an amazing loaf of bread!
I do love this delicious warm banana bread right off the of the cooling rack. If you have extra simply store in an airtight container. It makes great housewarming gifts too! It is an easy recipe to use over-ripen bananas.

Ingredients
- 3-4 whole ripe bananas
- 1 box yellow cake mix (you can also use gluten free, sugar free or other flavor)
- 2 large eggs
Instructions
- Preheat the oven to 350 degrees.
- Smash bananas in a large bowl, then add remaining ingredients and mix well.
- Spray 2 small loaf pans or 1 large loaf pan with non stick cooking spray.
- Fill the pans (or pan) with batter.
- Bake at for 35-40 minutes - you might need to bake longer if using 1 loaf pan.

Melissa@StockpilingMoms
A better substitute would be 9-inch square cake pan (1½ inches deep) or (2) 8-inch round cake pans

I made this using spice cake instead of yellow cake and added some walnuts and WOW!!!!! even my husband raved about it!! I will never use any other recipe now!!
Teresa
I'm SO glad I saw your comment! Because of it, I used the spice cake mix, and WOW!! Super delicious! I've made this about 5 times now & only use the spice cake mix. Thank you stockpilingmom for the recipe, and thank you Shelly for the awesome tip!
Karen
I made this and used a bundt pan. It turned out so good it was gone in a matter of hours.
Brittany
Can this be done in a bread machine??
Melissa@StockpilingMoms
I have no idea. I don't own one 🙁
Ellen Raguette
No. Bread machines are made to make yeast breads not quick breads
Debra
Made this today with triple chocolate fudge cake with a peanut butter and cream cheese filling. YUM!
Kathy Casey
I would love the recipe for the triple chocolate fudge cake mix with the peanut butter and cream cheese
Lorraine
If I use a bundt can, how long should I bake it for?
Melissa@StockpilingMoms
It should just take a little longer. I would add 5 minutes and check for doneness and then just check again every 5 minutes until done.
Judy
What size loaf pan and can you use only one pan?
Judy
While waiting for a response to my question, I went ahead and baked it in a 9/5 loaf pan. I also added blueberries, and chopped pecans. It came out great and is almost gone! Family loved it, as did I. Will be making it again. Thanks for a great recipe.
Ronda
I made these as muffins and baked for 27 minutes in a 350 preheated oven. After lining the muffin tin with liners, I filled it about halfway with the batter, sprinkled a mixture of butter, cinnamon, sugar and flour that I mixed to the consistency of wet sand, then filled the muffin tin with the batter and sprinkled more of the butter cinnamon mixture on top. The muffins came our flavorful and moist with a nice, crunchy muffin top. Hubby loves them. Says I should go into the muffin business. Thanks for this easy recipe.
Melissa@StockpilingMoms
That sounds amazing!
Sara
Can you cook this in the crockpot? And if so for how long?
Melissa@StockpilingMoms
We haven't tried but I bet you can. Maybe try 2 hours on low?
Amber Keys
This is a great recipe thank you! I was wondering how long it lasts and does it need to be refrigerated?
Melissa@StockpilingMoms
You can refrigerate to extend the life but I would keep in an airtight container. We never have it last more than a couple days here 🙂
Kayla
Could you freeze half the batter? It is only my son who eats Banana Bread and the last time we made this AMAZING recipe he didn't eat it fast enough and it went bad. He usually eats this for breakfast and for games
Melissa@StockpilingMoms
No but you can bake it and the freeze the bread 🙂
Dorothy
I made this and it came out great. FYI I have 2 diabetics in the house, I switched out the regular cake mix with Pillsbury sugar free cake mix and it came out fantastic. Big Hit !!!
Regina
Great recipe! Leaving on a trip and needed a recipe to use 4 overripe bananas. I already had a butter pecan cake mix so I was able to use it instead of running to the store. Made a delicious loaf of banana bread to start our vacation.
Lori
Looking to make the recipe more like cake and not bread any suggestions
Thank you
Melissa
I would add another egg if you want it to be more cake-like. But I think it's perfect just the was it's written. Mine was very light. I did add about 1/4 cup of oil
Cheyenne McHone
I love love love this recipe, I make it all the time! Does anyone know if you could substitute the bananas for a can of pumpkin to make pumpkin bread?
Melissa@StockpilingMoms
Oh yes, I think so!
Roxanne
I am making it first time right now.
Yellow cake mix, 3 bananas, 2 eggs, 1/2 c. Peanut butter chips, and 1/2 c. Walnuts. In a bundt cake pan. We will see! Smells fantastic!
Jackie P
Sounds delicious
Roxanne
This is a very versatile recipe I feel. That's the type I like. I made it with peanut butter chips. Who doesn't like peanut butter and banana. It was Elvis Presley favorite! I also added the walnuts. I have to put nuts in most of my breads accept the lemon poppy seed. I baked it in a bundt cake pan for the time that was stated. I added a cream cheese glaze to the top of it and it is amazing.
Whitney Runge
You don’t put almonds in your lemon poppyseed muffins? Might try it!
Scott
I made mini muffins. I added walnuts that I cut really fine (kids claim they don't like nuts) so that they added a little protein. Baked them for 12-14 minutes and they were done. I got 48 mini muffins from the one batch! We love them!
Jane
Could this be made with zucchini instead of bananas?
Melissa@StockpilingMoms
Not sure about that but I bet it could! Maybe add a little applesauce too. Let us know if you try it!
Alma Patino
Use a mixer or mix by hand?
Melissa@StockpilingMoms
I used a hand mixer.
Lisette
If I used a spice cake mix, is there a glaze or frosting you recommend? I also have a white cake mix that I could use blueberries with... Thoughts? Love all the responses, super encouraging.
(:

Ignore my stars!!!! I accidentally clicked them before sending and it went to 1, I had 5! *****

You can always sift powdered sugar over the top after cooling. It's a pretty finish. 🙂
Elisa
In Denver here just about 5600 ft. How do I adjust this recipe for high altitude?
Melissa@StockpilingMoms
Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
Reduce sugar: for each cup, decrease 0 to 2 tablespoons.
Increase liquid: for each cup, add 2 to 4 tablespoons.
Increase oven temperature by 25 degrees F.
Elisa
Thanks!
I used super moist butter pecan mix. Added an extra banana (4 total) an extra egg (3 total) and 8Tbsp of water. I hand mixed the batter. It is very important at high altitude to not over mix. And I baked for 45 mins at 375° in a bundt pan. It turned out amazing! Thank you for the recipe. I will never make banana bread any other way!
Lisa Stewart
If I can do it I'm saying anyone can make a perfect banana nut bread every time!

I would love to try this recipe using both bananas and avocado. Would I change the amount of eggs??? Any suggestions???
Melissa@StockpilingMoms
Hmmm. I do think it might. I would go 1/2 the amount of banana's and the other 1/2 avocado.
bonnie
I have never used a cake mix before, so am new to this, wld. you use vanilla and cinnimon, add cinn. to dry ingredients and vanilla to wet ing.?
Melissa@StockpilingMoms

Lona Hoxworth
Made this. Easy, good, not great.I would make it again if I needed it in hurry
Genefa
I only have 2 banana's and the cake mix and eggs. Will 2 do instead of 3?
Melissa@StockpilingMoms
Give it a try! You can always add a little applesauce if you have it.
Mikaela
i want to try one with chocolate chips, how much did you use, and what did you do to make that one???
Melissa@StockpilingMoms
Just stir in a 1/2 cup or desired amount and bake 🙂
Janette
Making this now.. As muffins to freeze for quick breakfast or desserts.. Added a bag of chocolate chips but after reading the comments i can see all sorts of possibilities. Thinking i have some frozen cranberries i will have to try this with..
Melissa@StockpilingMoms
You will love the diversity with this recipe! 🙂 Cranberries sound yummy!
Amanda
I'd like to try this with a lemon cake mix and blueberries. What could I substitute to add the moisture that the bananas would normally give this recipe? Sour cream? Applesauce? Water?
Melissa@StockpilingMoms
Applesauce!
Kathy
One more ripening day, I'm so excited!! What about strawberries or will that make it too mushy? This is my kind of baking, I;m over the 12 ingredient cooking!
Melissa@StockpilingMoms
Oh yes, I think strawberries might be nice!
Betty
How many servings will this recipe make?
Melissa@StockpilingMoms
10-12 slices

Had 3 riped bananas and exactly 2 eggs in fridge and box of yellow cake mix in cabinet. Came out great. Heading on vacation, gonna take with me. Thank you so much for this easy recipe. Cathy from VA 🙂
Melissa@StockpilingMoms
Yay! Enjoy your vacation and this easy 3 ingredient banana bread!
Lori
Just made the banana bread. It was so easy and turned out moist and delicious. I added walnuts- awesome.
Can't wait to share the receipe with my friends.
Maria
How much applesauce would one use ...and can I use parchment paper instead of spray in the loaf pan thank you
Melissa@StockpilingMoms
1/4 cup applesauce = 1 egg when making substitution for baking.
L
I baked two, 8 inch pans (at the same time) with this recipe and added chocolate chips to both (right before putting it into the oven, and it came out delicious! Baked at 350 for 25 minutes. It is so light and fluffy! Thank you for the recipe!
Shay
I made this with a banana supreme cake mix and added walnuts, vanilla and cinnamon and it turned out so good!
Leslie Z
I also used a Banana Supreme Cake Mix, Vanilla, bananas & eggs .... OMG .... The muffins were Amazing!!!! Ready to make another batch 🥰
Keni Taylor
I used a gluten free cake mix, 3 eggs, 3 super ripe bananas and 2 tbs. of oil plus the cup of chocolate chips. Two small bread pans (8") and baked at 350 for 40 minutes. PERFECT BREAD! Great option for gluten watchers!
Jan
This came out delicious and extremely easy to make, I did add 1/2 cup sour cream and baked in bundt pan for 40 minutes. Will definitely make again. Thanks so much for this wonderful recipe!
Judy Dunnett
I followed cake box recipe, exchanged water for buttermilk as I had some over and it was amazing, so light. Couldn't have been easier, Definitely a quick go to recipe when in need.
Regina
This is an amazing recipe! I've made it several times and it always comes out great. When I get too many overripe bananas I just stick them skin and all into a Ziploc bag then throw them in the freezer. Then thaw in the fridge. I cut the end off the banana and basically pour the contents into a bowl. My husband swears that this makes the banana bread more banana'y. Lol. Love your blog!
Diane D Ricardo
I made 20 muffins instead of the loves....this is so good But what are nutritional values...or WW points
Melissa@StockpilingMoms
Do you use My Fitness Pal? I often just use that to figure out Macro's.
D
I just made 20 muffins also - they are 2 freestyle points each.
Penny Moore
I made this banana bread, followed your Ingredients except I added 1/3 cup of fine chopped walnuts (will add more next time I make this bread). Delicious! Thank you for the recipe.
Melissa@StockpilingMoms
That is awesome! Love the addition of the Walnuts!
Me

Go yes it turns out great you can never mess it up.

Just made in bundt pan! Wonderful recipe, kids loved it. Thank you.
Donna
I’ve been making this for years. My recipe has 4 oz softened cream cheese and 3/4 c nuts. Great way to use up overripe bananas delicious too!
Ben
I used "spice cake" mix, figuring it would be even better. It was great! I also made about 2 dozen in muffin pans, baking for 20 minutes. They're such great little snacks that way. Very chewy on the outside, moist and fluffy inside.
Eugene
Could you substitute oatmeal for cake mix.
Lori
Hi, generally I’m not a baker so this recipe sounds great! I have an expired yellow cake mix or new chocolate cake mix in my cabinet Not sure if I can use the expired (2018) one? Also, when would I add strawberries? In the mix it self or afterwards, before baking, on top? Cut them up tiny not whole? I’m thinking of baking cupcakes so they’re easier to freeze. I’m not ever sure when the bananas are considered “ripe” enough to bake. Any advice?Thank you so much 😊
Melissa Jennings
Do not use an expired cake mix. It is not like some other products that you can use past the expiration date. You can ripen your bananas by placing them in a brown paper bag 🙂 After you mix, gently stir in the fruit. Yes, cut them up.
Lori
Hi Melissa,
I just saw your reply...thank you!
I didn’t use the expired mixes but wondered why as I thought it just wouldn’t rise well but health wise would still okay?
I actually made 2 breads and gave one to my parents. My Dad doesn’t like bananas but enjoyed it (he didn’t know it was made with banana ms, lol).
Thanks again! Be well, stay safe and healthy!
Julie Whitaker
I added chocolate chips and absolutely amazing!!! Thank you thank you for a easy and delicious recipe!
Shari
I only had a Betty Crocker French Vanilla cake mix, but it turned out AMAZING!!! Followed the recipe and baked in a loaf pan at 350 for “60 mins” it took longer than the recipe called for.
Alicia K
I don’t normally leave reviews, however, this was delicious and so easy. I added a bit of vanilla pasta and some raw sugar on top and it is amazing. Can’t wait to make it again!
Beth
Would it work to substitute canned pumpkin for bananas?
Melissa Jennings
Give it a try?
Sarah Bailey
Now, this is a timely post to come across, we have just gone back into lockdown so if anything is going to happen I can see it being more banana bread making. I shall have to try your recipe out. Thank you.

I used 4 bananas and a regular (ie not “super-moist”) Duncan Hines yellow cake mix. Gave me two loaf pans worth.
Putin oven for 37 minutes. Tastes great, came out crumbly. Didn’t stop me from just softening butter and spreading it on there.
