I have been looking for an easy scrambled egg recipe – my son eats them every morning however I wanted to do a one step method and eliminate the pan and it dawned on me to try the microwave! It works like a charm and he loved them. So easy!
This would be great if you are eating low carb too! Simply make your mug and head out the door! Hope you enjoy!
- 2 eggs
- 1 TBSP milk
- 2 TBSP shredded colby jack cheese
- Dash of Salt and Pepper
- Coat a microwave safe mug with cooking spray or melted butter. Add 2 eggs and milk, beat with a fork until well mixed, add a dash of salt and pepper if desired.
- Microwave on high for 45 seconds: stir. Microwave until eggs are almost set (30-45 seconds more).
- Top with cheese and microwave for 5 seconds.
